Cook Organic Brown rice according to the directions on the package for 2 cups; should be about 20-30 minutes.
Serves 4 - 1 cup servings
1 Large Leek, white and pale green part only
2 Tbs. extra-virgin olive oil, divided
1/2 lb. brown mushrooms, chopped
1 Tbs. reduced-sodium soy sauce
1 Tbs. freshly ground pepper
2 cups cooked brown rice or other whole grain
1 bunch scallions, chopped
Quarter the leek lengthwise, rinse it well, then thinly slice it. In a large non-stick skillet, saute' the leek in 1 Tbs. of the oil over medium-low heat until tender and bright green, 2-3 minutes. Remove from the skillet.
Increase the heat to medium-high and saute' the mushrooms in the remaining 1 Tbs. of oil until golden brown, 3-5 minutes. season with the soy sauce and pepper to taste.
Return the leek to the skillet, add the rice and scallions and stir-fry until all ingredients are hot, 1-2 minutes.
